Brie transforms casual quesadillas into an elegant hors d’oeuvre. This recipe is easily doubled and can be assembled two hours ahead; bake just before serving.
Ingredients
- 1 Tbs. olive oil
- 1 cup thinly sliced onion
- 8 6-inch flour tortillas
- 1/2 lb. soft Brie cheese, cut into 1/2-inch pieces
- 1/2 cup dried cranberries
Preparation
Preheat oven to 425F (unless making ahead). Heat oil in medium skillet over medium-high heat. Add onion, and cook 5 to 7 minutes, or until soft and browned, stirring often. Transfer onion to small bowl to cool.
Arrange 4 tortillas on baking sheet. Divide Brie pieces and onion among tortillas, sprinkle with cranberries, then top with remaining tortillas, pressing to adhere. (If making ahead, cover with plastic wrap, and refrigerate.)
Bake 8 minutes, or until cheese melts. Cut each into 6 wedges, and serve.
