Broccoli and Trail Mix Salad

30 minutes or fewer

“One night I happened to be munching on some trail mix while cooking some broccoli,” says Kathy Malone of High Springs, FL. “The idea came to me to mix the two and refrigerate it for the next night, when I knew I’d get home late from the gym. I thought, Â?Well, Â?I'll get my veggies and protein all in one bowl.’” Malone suggests serving the salad with whole-grain bread in summer or hot bean soup in winter.
