VEGAN, GLUTEN FREE

INGREDIENTS:
1 14-oz. can coconut milk
6 Tbs. maple syrup
2 Tbs. rice syrup
1 ½ tsp. vanilla extract
3 tsp. ground Mexican cinnamon (canela)
pinch sea salt

INSTRUCTIONS:
Bring all ingredients to a boil in medium saucepan. Reduce heat to medium-low, and simmer 1 to 2 minutes, whisking constantly. Cool. Freeze mixture in ice cream maker according to manufacturer’s instructions.
