Chips and queso are a snack combo few can resist. This version of the cheesy dip gets a kick of color and flavor from roasted red peppers and green onions. It gets its creaminess from condensed milk and is thickened with arrowroot powder, which has a silkier, less chalky consistency than cornstarch or flour. Be sure to grate your own cheese for the recipe—packaged grated cheese often has cornstarch added to it, and it can make the sauce too thick.
Ingredients
- 8 oz. extra-sharp Cheddar cheese, grated
- 1 Tbs. arrowroot powder
- 1 12-oz. can low-fat evaporated milk
- 1 bunch green onions, finely chopped (1 cup)
- 1 12-oz. jar roasted red peppers, drained and chopped
- 2 Tbs. chipotle pepper sauce, such as Tabasco
Preparation
Toss cheese with arrowroot powder in 6-cup microwave-safe bowl. Stir in evaporated milk. Microwave on high power 4 to 5 minutes, stirring every 1 to 2 minutes to melt cheese. When sauce is smooth and thick, stir in green onions, roasted red peppers, and chipotle sauce.
