Fennel and Orange Salad


Barbara Mariz enjoys dishes that exemplify the Italian focus on food that's fresh, local, and seasonal. Fennel, revered by Italian cooks, has a licorice flavor that marries well with sweet oranges and fragrant mint.

  • 1 fennel bulb, halved and thinly sliced (2 cups)
  • 2 medium oranges, peeled and segmented
  • 1 Tbs. olive oil
  • 1 tsp. lemon juice
  • 2 Tbs. fresh mint, minced


Toss fennel with orange segments in large bowl. Add oil and lemon juice, and carefully mix without crushing orange segments. Season with salt and pepper, and sprinkle with fresh mint.
