Fennel-Quinoa Salad with Orange and Basil

Look for sprouted quinoa at natural food stores—it’s nuttier and crunchier than the cooked grain.

Ingredients

  • 2/3 cup orange juice
  • 2 Tbs. lemon juice
  • 2 tsp. olive oil
  • 1 tsp. grated lemon zest
  • 1 tsp. grated orange zest
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 3 cups cooked or sprouted quinoa
  • 2 cups orange sections
  • 1 small fennel bulb, chopped
  • 1/4 cup chopped walnuts
  • 2 Tbs. minced shallots

Preparation

Whisk together both juices, oil, both zests, salt and pepper in serving bowl. Add quinoa, orange sections, fennel, walnuts and shallots, and toss to coat.
