Ginger-Mint Mojitos

Straining out the mint leaves and ginger gives these cocktails plenty of flavor without your having to pick mint from your teeth.
Ingredients
- 2 limes
- 2/3 cup white rum
- 10 fresh mint sprigs, (about 1/2 cup), plus more for garnish
- 1/4 cup sugar
- 2 Tbs. minced fresh ginger
- 2 cups club soda
Preparation
Juice limes (1/4 cup), and reserve juiced halves. Mash limes, juice, rum, mint, sugar and ginger in bowl with spoon. Strain into bowl after 20 minutes; discard solids.
Fill 4 glasses with ice, 1/2 cup rum mixture and 1/2 cup club soda. Garnish with mint sprigs.
