The usual Sunday Scaries have been hitting a little bit different for the last little while – living through global pandemic, political strife, and ecological crisis will do that do you. One thing its reminded us of is the role simple self-care rituals – like making a comforting cup of this golden goji latte – can have in our lives.

This recipe comes from Julie Morris’s Smart Plants: Power Foods and Natural Nootropics for Optimized Thinking, Focus, and Memory. In addition to being a cozy, grounding vegan latte with a pleasant taste and lovely color, it also packs in ingredients known for their anti-inflammatory, memory-boosting, and stress-soothing properties. Basically, everything we need when we’re taking a break from the world on a Sunday evening for a little time to clear our heads and prepare for the week.

Morris’s recipe includes healthy fats in the form of coconut oil or MCT oil. Many MCT options are derived from palm kernel oil, so if you go that route, be sure to opt for a producer that verifies the production is animal-safe.
