Greek-Style Pita Pocket

Vary this tasty pita by using other types of cheese, soy or dairy. If desired, serve the filling on its own as a salad. You could also mix in some canned chickpeas for a heartier meal.

Ingredients

  • 1/4 cup chopped romaine lettuce
  • 2 Tbs. crumbled feta cheese
  • 2 Tbs. chopped black olives
  • 1 Tbs. chopped jarred roasted red peppers
  • 2 tsp. Good Fat Dressing
  • 1 whole-wheat pita pocket, cut in half

Preparation

In small bowl, combine lettuce, cheese, olives, peppers and dressing and mix well. Spoon into pita halves. Wrap tightly in plastic wrap.
