Blue cheese dressing is an American favorite—but boy, can it add calories to a salad. This homemade version is lightened up with low-fat mayonnaise and fat-free buttermilk. Roquefort is a sheep’s milk cheese from the south of France, but you can substitute any blue cheese. This Roquefort dressing will keep for about a week in the fridge.

Ingredients

  • 3 oz. Roquefort cheese
  • 1/2 cup low-fat mayonnaise
  • 1/4 cup fat-free buttermilk
  • 2 Tbs. olive oil
  • 1 Tbs. sherry vinegar

Preparation

Mash cheese with fork in bowl, leaving some lumps. Fold in mayonnaise, buttermilk, and olive oil with fork. Stir in vinegar.
