For a make-your-own meal, nothing beats baked potatoes with all the fixings. Set the table with sweet potatoes cooked in the microwave and the following toppings for a healthful feast the whole family will love.
Ingredients
- 3 Tbs. maple syrup, divided
- 3/4 tsp. ancho chile powder, divided
- 8 slices refrigerated vegetarian bacon (6 oz.)
- 1 cup reduced fat (2%) Greek yogurt
- 1 Tbs. chopped chives
- 1/4 tsp. cayenne pepper
- 1/8 tsp. salt
Preparation
Combine 1 Tbs. maple syrup with 1/2 tsp. ancho chile powder in cup. Heat nonstick skillet sprayed with cooking spray over medium-high heat. Add bacon, brush with half of maple syrup mixture, and cook 1 minute. Flip, brush with remaining maple syrup mixture, and cook 2 minutes more, or until heated through. Cut into bite-size pieces, combine with yogurt, remaining 2 Tbs. maple syrup, chives, 1/4 tsp. chile powder, cayenne pepper, and salt in bowl.
