Parsleyed Potatoes with Snipped Chives

Ingredients

  • 1 1/2 lb. fingerling potatoes, cut into 1-inch pieces
  • 1/3 cup chopped parsley
  • 1/3 cup chopped chives
  • 2 Tbs. olive oil
  • 1 1/2 Tbs. fresh lemon juice

Preparation

Steam potatoes 20 minutes, or until tender.

Transfer to large bowl. Toss with parsley, chives, olive oil and lemon juice. Season to taste with salt and pepper.
