Rice with Hearts of Palm

Hearts of palm, or palmitos, are grown on large plantations in the subtropical areas of Costa Rica. Fresh hearts of palm taste exquisite, but the canned version is an adequate substitute.

Hearts of palm, or palmitos, are grown on large plantations in the subtropical areas of Costa Rica. Fresh hearts of palm taste exquisite, but the canned version is an adequate substitute.

Ingredients

  • 4 cups cooked white rice
  • 1 cup sour cream
  • 2 cups grated mild cheese such as Monterey Jack
  • 1 cup tomato sauce
  • 2 cups thinly sliced or diced hearts of palm
  • 2 to 3 Tbs. butter

Preparation

Preheat oven to 375F. Grease 3-qt. ovenproof baking dish.

Layer all ingredients, starting with rice, 1/2 cup sour cream in dabs, 1 cup cheese, 1/2 cup tomato sauce and 1 cup hearts of palm. Repeat until all ingredients are used up. Dot top with butter.

Bake for 15 to 20 minutes, or until cheese melts. Remove from oven, and serve hot.
