As a last-minute option, this all-purpose chocolate dessert can’t be beat. The mousse is ready to eat in about 10 minutes, and no one will guess it’s made with tofu.
- 7 oz. bittersweet or dark chocolate, broken into pieces
- 3 Tbs. vegetable oil
- 24 oz. soft silken tofu, drained
- 1/2 cup dark brown sugar
- 2 Tbs. unsweetened cocoa powder
- 2 tsp. vanilla extract
- 1/8 tsp. salt
1 Place chocolate and oil in microwave-safe bowl. Microwave on medium power 2 to 3 minutes, or until melted.
2 Place tofu in food processor, and blend 1 minute, or until completely smooth and creamy. Add brown sugar, melted chocolate, cocoa powder, vanilla, and salt, and blend 1 minute more, scraping down sides until mousse is thick and smooth. Transfer to serving bowl. Chill, if desired.
