Thin strands of grated fresh zucchini melt into a fruit-sweetened pot of hearty steel-cut oats.
Ingredients
- 2 cups unsweetened apple juice
- 1 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/4 tsp. ground cloves
- 1/4 tsp. salt, optional
- 1/4 tsp. apple cider vinegar
- 1/2 cup steel-cut oats
- 1 cup finely grated zucchini
- 1 cup raisins or chopped dried figs
Preparation
1 | Bring apple juice, cinnamon, ginger, nutmeg, cloves, salt (if using), and apple cider vinegar to a boil in medium saucepan. Stir in oats, reduce heat to medium, and cook 2 minutes. Stir in grated zucchini and raisins.
2 | Reduce heat to low, and simmer oatmeal 30 minutes, stirring occasionally.
