Spicy Cajun Rice

Ingredients

  • 2 cups frozen pepper-and-onion blend
  • 1 Tbs. olive oil
  • 3/4 cup rice
  • 1 1/2 tsp. Cajun seasoning
  • 1 cup cooked black-eyed peas

Preparation

1 Pulse frozen pepper-and-onion blend in food processor until chopped.

2 Heat oil in medium saucepan over medium heat. Add chopped frozen vegetables, and sauté 5 minutes, or until most of liquid has evaporated. Stir in rice and Cajun seasoning. Pour in 2 cups water, cover, and reduce heat to medium-low. Cover, and simmer for 12 minutes, or until all of liquid has been absorbed. Stir in black-eyed peas, and season with salt and pepper, if desired. Let stand, covered, 5 minutes before serving.
