Tangy Horseradish Pea Purée

The English love their peas, and purées like this one are all the rage in the British Isles as chefs give pub grub a gourmet makeover. Try serving this recipe—or a simple pea purée with butter and milk—as a lighter, more healthful alternative to mashed potatoes.
Ingredients
- 4 cups fresh or frozen peas
- 1/4 cup low-fat sour cream
- 1 1/2 Tbs. prepared horseradish
- 1/4 cup chopped fresh chives
Preparation
Bring large pot of salted water to a boil. Add peas, and cook 3 to 5 minutes, or until tender. Drain, reserving 1/4 cup cooking liquid.
Transfer peas to food processor. Add sour cream, horseradish and cooking liquid, and blend until smooth. Sprinkle with chives, and serve immediately.
