This cooling combination of watermelon, fresh herbs, and crumbled cheese is sure to pleasantly surprise summertime guests. Serve immediately after preparing to prevent the cheese from getting soggy.

Ingredients

  • 2 cups diced watermelon (1-inch dice)
  • 1/2 cup crumbled feta cheese, queso blanco, or ricotta salata (11/2 oz.)
  • 1/4 cup chopped green onions
  • 1/4 cup mint leaves, chiffonade
  • 1 Tbs. lime juice
  • 1 Tbs. olive oil

Preparation

Gently toss together all ingredients in large bowl, using hands to keep from crushing watermelon and cheese. Season with salt and pepper, if desired.
