Whole-Grain Flour Blend


Amaranth and teff flours have a robust nutty, malty flavor and dark color. Pick one to combine with flaxseed meal for extra fiber in a whole-grain, gluten-free baking blend that’s similar in taste and texture to whole-wheat flour.

  • 2 cups amaranth or teff flour
  • 1 cup tapioca or potato starch
  • 1/4 cup ground flaxseed meal
  • 1 tsp. xanthan gum


Combine all ingredients in medium bowl. Store in airtight container, and use in place of whole-wheat flour, or use to replace up to half of the all-purpose flour or gluten-free flour blend in your favorite baking recipes.
