Yummy Peanut Sauce

A classic accompaniment to summer rolls, this simple sauce would make a nice topper for a green salad or noodle bowl.

Ingredients

  • 2 Tbs. peanut oil
  • 3 stalks fresh lemongrass, white part cut into 4-inch lengths and crushed
  • 3 cloves garlic, minced (1 Tbs.)
  • 2 Tbs. crunchy peanut butter
  • 1 Tbs. white miso paste

Preparation

Heat oil in skillet over medium heat. Add lemongrass and garlic, and sauté 1 minute. Add peanut butter, miso, and 3/4 cup water, and simmer 3 to 4 minutes, stirring often. Remove lemongrass pieces before serving.
