Ina Garten has been a fixture in the cozy food media world for ages, but she really zoomed back to the top of the charts during 2020. Remember when her massive mid-day quarantinis went viral last April? Relatable. And this week, she’s warmed our hearts yet again, dropping a blog post about a three-month 1970s camping trip she took with Jeffrey, complete with adorable vintage snapshots and a solid gold Spotify playlist of her favorite tunes from the era. It all has us dusting off our Barefoot Contessa cookbooks and pulling out our all-time favorite Ina Garten vegetarian recipes to share. When you’re ready to indulge in the whole laid-back Hamptons lifestyle fantasy for a moment, these are the dishes to make.

Vegetable Tian: Originally published all the way back in her 2004 book Barefoot in Paris, this Ina Garten vegetarian recipe is a French-accented classic that looks so beautiful on the table for a dinner party.

Roasted Cauliflower ‘Snowflakes’: Crispy, roasty, and a little salty, these cauli bites work well along with grilled veggie skewers or instead of fries on your next burger night.

Confetti Corn: Need a fun, vegan side dish for your summer meals? This corn salad is a celebration of peak-season corn (but if you make it with frozen, we won’t tell).

Waffle Iron Hash Browns: They’re potato hash browns, but made so quick, easy, and batch-able by cooking in a waffle iron. Simple idea, but once you’ve tried it, you won’t go back.

Salmorejo: Salmorejo is a chilled Spanish soup in the same lineage as gazpacho, but with a more pared-down ingredients list. It’s a lovely (and vegan) way to showcase a bounty of ripe summer tomatoes.

Roasted Vegetable Lasagna: Cozy, comforting lasagna feels like an Ina Garten essential, and this vegetarian version doesn’t disappoint.

Warm Brown Rice & Butternut Squash: It may not feel like butternut squash season right now, but keep this one in your pocket for Thanksgiving. It’s a vegan dish that every eater will love.

Chipotle and Rosemary Roasted Nuts: This simple cocktail mix is a certified crowd-pleaser. Set a batch out to snack while sipping cocktails with friends – or place it out for guests to graze while you run late making a dinner party entree.

Watermelon Mojito: Ina Garten wouldn’t want us to wrap up this list without at least one cocktail. We know she loves her cosmos, but we’re more partial to this similarly-hued bevvie.
