30 Minutes – Fresh Flavors In A Flash

Believe it or not, even quick-and-easy cooking with convenience foods can showcase the best of spring—fresh fruit, delicate herbs and tender new vegetables. Just take the most dependable prepared products (such as pizza dough, pesto and shredded cheeses), combine them with prewashed (and even prechopped!) veggies, then enhance everything with herbs, citrus and other zingy flavors. It’s a foolproof recipe to bring on spring—and get dinner on the table—even when you’re caught up in the weeknight crush.

Blackberry-Lime Sundaes

Serves 4 l 30 minutes or fewer

For even more tart, fruity flavor (or to make this recipe vegan), replace the frozen yogurt with lime sorbet (substitute soy margarine for the butter) and garnish each sundae with sprigs of fresh mint.

1/4 cup sugar

2 Tbs. lime juice

1 Tbs. unsalted butter

1 tsp. lime zest

2 cups fresh blackberries

1 pint vanilla frozen yogurt

4 1/4-inch-thick round lime slices, optional

1. Combine sugar, lime juice and butter in large skillet over medium-high heat. Cook 3 minutes, or until sugar dissolves. Let cool 2 minutes.

2. Stir lime zest into syrup, then toss with berries in bowl.

3. Scoop frozen yogurt into glasses or dessert dishes; spoon berries and sauce over frozen yogurt. Garnish with lime slices, if desired.
