Fruit and sweetened ricotta combine for a novel way to satisfy your sweet tooth. Adapted from The Bagel Bible: For Bagel Lovers, the Complete Guide to Great Noshing.

Ingredients

  • 4 cinnamon-raisin bagels, halved
  • 1 8-oz. pkg. nonfat cream cheese, room temperature
  • 1/4 cup granulated sugar
  • 1/8 tsp. ground cinnamon
  • 2 tsp. lemon juice
  • 1 egg or 1/4 cup egg substitute
  • 1 tsp. vanilla extract
  • 2 cups sliced fresh fruit

Preparation

Preheat oven to 375F.

Scoop out some of insides of bagel halves to make shells. Reserve bagel insides for another use.

Mix together cream cheese, sugar, cinnamon, lemon juice, egg and vanilla usingan electric mixer until ingredients arethoroughly blended. Carefully spoon mixture into bagel shells. Set bagels on cookie sheets.

Bake for 15 minutes, or until filling sets. Remove from oven, and set aside to cool. To serve, top each half with fresh fruit of your choice.
