Ingredients

  • 1 Tbs. vegetable shortening
  • 2/3 cup chopped onions
  • 1 clove garlic, chopped
  • 1 pinch herbes de Provence
  • 1 tsp. tamari soy sauce
  • 3 slices whole wheat bread
  • 1/4 cup plus 1 Tbs. (3 oz.) bread-crumbs
  • 1/4 cup cubed tofu
  • 1 oz. brewers' yeast
  • 1 oz. grated Swiss cheese
  • 3 oz. barley flakes
  • 1 large egg, beaten
  • 2 Tbs. vegetable oil

Preparation

Heat shortening in large saucepan over low heat. Add onions, garlic, herbes de Provence, tamari soy sauce, salt and pepper. Mix, and cook for 8 minutes.

Place mixture into mixing bowl, and add bread, breadcrumbs, tofu, brewers’ yeast and cheese. Using electric mixer, beat until well blended. Stir in barley flakes, then stir in egg until well blended.

Shape mixture into 3-inch rounds. Heat oil in large skillet over medium heat. When hot, panfry patties until browned on both sides. Remove from heat, drain on paper towels and serve.
