One night I happened to be munching on some trail mix while cooking some broccoli, says Kathy Malone of High Springs, FL. The idea came to me to mix the two and refrigerate it for the next night, when I knew Id get home late from the gym. I thought, Â?Well, Â?I’ll get my veggies and protein all in one bowl. Malone suggests serving the salad with whole-grain bread in summer or hot bean soup in winter.
Ingredients
- 2 cups broccoli florets
- 3 Tbs. soy mayonnaise
- 2 1/2 tsp. cider or red wine vinegar
- 3/4 cup trail mix
- 1/4 cup chopped onion
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped celery
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
Preparation
Steam broccoli florets until just tender, and submerge in cold water to cool. Stir together mayonnaise and vinegar; set aside. Combine florets, trail mix, onion, red bell pepper, celery, oregano, basil and garlic salt in salad bowl. Toss with mayonnaise mixture, and serve.
