Ingredients

  • 3 medium crisp apples, cored and diced
  • 1 1/2 Tbs. fresh lemon juice
  • 2 large stalks celery, diced
  • 1/2 cup raisins
  • 1/3 cup soy mayonnaise
  • 1/4 cup finely chopped walnuts
  • 1 pinch ground nutmeg
  • 2 cups mixed baby greens for serving

Preparation

In medium bowl, toss together apples and lemon juice. Add remaining ingredients except greens and toss until well mixed.

Line 4 salad plates or shallow bowls with greens. Divide salad among plates and serve.
