This summer soup, rich in beta-carotene, is subtly sweet with a hint of nuttiness and spice.
Ingredients
- 4 cups fresh carrot juice (from 2 lb. carrots)
- 3/4 cup pine nuts
- 1 avocado, sliced
- 2 tsp. grated fresh ginger
- 2 tsp. lime juice
- 1 clove garlic
- 1/4 tsp. cumin
Preparation
Purée all ingredients in food processor until smooth. Season with salt and pepper.
