Ingredients
- 1 fennel bulb, halved and thinly sliced (2 cups)
- 2 medium oranges, peeled and segmented
- 1 Tbs. olive oil
- 1 tsp. lemon juice
- 2 Tbs. fresh mint, minced
Preparation
Toss fennel with orange segments in large bowl. Add oil and lemon juice, and carefully mix without crushing orange segments. Season with salt and pepper, and sprinkle with fresh mint.
