These crisp crumbs are an excellent substitute for grated cheese. Always use soft, fresh bread crumbs, which you can purchase from a bakery, or prepare them yourself by cubing slices of bread. Store unused crumbs in an airtight container at room temperature for up to four days or freeze in airtight plastic bags for up to six months.
Ingredients
- 2 Tbs. olive oil
- 2 cloves garlic, minced
Preparation
In large nonstick skillet, heat oil over medium-high heat. Add garlic and cook, stirring, until opaque but not brown. Add bread crumbs and cook, stirring often, until crumbs turn golden (be careful not to let them burn), 5 to 8 minutes.
Scrape crumbs onto paper towels and let cool before using or storing.
