Ingredients

  • 2 romaine lettuce hearts (3 oz. each), chopped (4 cups)
  • 1 large tomato, finely diced (11/2 cups)
  • 1 avocado, finely diced (1 cup)
  • 4 slices soy bacon, cooked and crumbled
  • 1/3 cup crumbled blue cheese (11/2 oz.)
  • 2 hard-boiled eggs, quartered
  • 1 lemon, sliced into 8 wedges

Preparation

Toss together romaine, tomato, avocado, soy bacon, and blue cheese in large bowl. Scoop 1/2 cup salad into each of 8 ramekins, small bowls, or old-fashioned cocktail glasses, and top each salad with 1 wedge hard-boiled egg and 1 wedge lemon. Serve olive oil on the table so guests can drizzle their own.
