Ingredients

  • 1/2 cup fresh orange juice
  • 2 Tbs. julienned orange zest
  • 2 Tbs. honey
  • 1 Tbs. butter or margarine
  • 1/8 tsp. ground cardamom
  • 1 1/4 lbs. snow peas, strings removed

Preparation

In small saucepan, combine all ingredients except snow peas. Bring mixture to a boil. Reduce heat and simmer until liquid is reduced to about 1/4 cup. Blanch snow peas in boiling water about 30 seconds; drain. Immediately transfer snow peas to serving dish. Pour orange sauce over snow peas and toss to coat. Serve hot.
