Rice-Soy Waffles

A light, crisp waffle that’s easy to make. Leftovers can be frozen.
Ingredients
- 1 cup rice flour
- 1/2 cup soy flour
- 1/2 cup potato starch flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1 Tbs. sugar
- 3 large eggs
- 1/4 cup vegetable oil
- 1 1/2 cups plain soy milk or milk
Preparation
In medium bowl, combine dry ingredients. Set aside.
In small bowl, beat eggs, oil and soy milk. Add dry ingredients and fold gently with spoon. Don’t overbeat.
Heat waffle iron. Cook according to manufacturer’s directions. Serve hot.
