Ingredients
- 2 Tbs. olive oil
- 2 medium onions, finely diced (3 cups)
- 1 Tbs. chili powder
- 1 tsp. ground cumin
- 1 tsp. curry powder
- 1/4 tsp. cayenne pepper
- 1 Tbs. tomato paste
Preparation
1. Heat oil in large skillet over medium-high heat. Add onions, and sprinkle with salt. Cook 7 to 9 minutes, or until onions are browned, stirring occasionally. Stir in chili powder, cumin, curry powder, and cayenne; sauté 2 minutes, or until spices are fragrant.
2. Add tomato paste and 1/2 cup water. Cook 5 to 6 minutes, or until most of water has evaporated, and onion mixture is thick enough to coat a spoon. Season with salt and pepper, if desired. Cool to room temperature before serving.
