Dairy-Free Peach Ice Cream

You don’t even have to peel fresh peaches to make this ice cream.
Ingredients
- 4 cups sliced fresh peaches, or 1 lb. frozen peach slices
- 1 cup vanilla soymilk
- 3/4 cup packed light brown sugar
- 2 Tbs. lemon juice
- 1/2 tsp. vanilla extract
- 1/2 tsp. salt
Preparation
If using fresh peaches, spread slices in baking dish, and freeze 4 hours, or until firm.
Place peaches and remaining ingredients in food processor, and blend until smooth. Serve immediately, or freeze 30 minutes for firmer texture.
