Curry paste (available in the Asian foods section of most supermarkets) is a thick, spicy seasoning used in Indian curries and stews. For a fast flavor lift, stir 1 tsp. into canned soups or bottled salad dressings.

Ingredients

  • 2 Tbs. prepared curry paste
  • 4 oz. soy crumbles
  • 2 cups baby spinach leaves
  • 1/2 cup shredded carrots
  • 1/2 cup diced tomatoes
  • 1/2 cup chickpeas (from 15.5-oz. can),drained and rinsed
  • 6 large lettuce leaves

Preparation

Whisk curry paste into 1/3 cup water in large microwave-safe bowl. Add all remaining ingredients except lettuce leaves. Cover, and microwave on high 3 minutes.

Stir mixture to combine; cover and cook on high 2 minutes more, or until vegetables are tender.

Spoon about 1/3 cup curry mixture onto each lettuce leaf. Wrap, and eat with your fingers.
