Making your own pumpkin purée is easy, and enhances the flavor of recipes like this one for Chocolate-Crusted Pumpkin Pie!
Not just for jack-o’-lanterns and Thanksgiving pie, pumpkins play a delicious role in healthful cooking. When you need pumpkin purée, canned often works as well as homemade—check the label for “solid-pack” rather than “pie filling.”
To make your own purée, choose small (10 inches in diameter), brightly colored sugar pumpkins. Halve or quarter each pumpkin, remove the seeds, and put pieces cut side down on a baking sheet. Bake at 350°F for 30 minutes to 1 hour until soft. Scoop out flesh, and mash it, or pulverize it in a food processor.
