In Austria, pickled red onions are served with rye bread and a paprika-flavored cheese spread. The onions make a great topping for sandwiches, veggie burgers, and tacos.

Ingredients

  • 1/2 cup apple cider vinegar
  • 1/3 cup sugar
  • 1/2 tsp. black peppercorns
  • 1/2 tsp. salt
  • 6 whole allspice
  • 1 small clove garlic, peeled
  • 1 small bay leaf
  • 1 large red onion, halved and thinly sliced (2 cups)

Preparation

Bring vinegar, 1/2 cup water, sugar, peppercorns, salt, allspice, garlic, and bay leaf to a boil in saucepan. Add onion slices, and return to a boil. Remove from heat, and transfer to bowl or jar. Cover, and cool. Let stand at room temperature 24 hours before serving. Onions will keep up to 2 weeks in fridge.
