Ingredients

  • Olive oil
  • lime juice
  • grated lime jest
  • kosher or sea salt
  • green onions
  • coarsely chopped mint leave
  • red radishes, halved and thinly sliced
  • baby cucumbers, halved and thinly sliced

Preparation

Whisk together oil, lime juice, and lime zest in bowl. Stir in green onions, chile, and mint. Fold in radishes and cucumbers, and let stand 10 minutes before serving.
