Sure, tomato-mozzarella-basil panini are all-time classics (and especially good with summer tomatoes). But ooh, what a little improvisation can do when smashing fresh ingredients between two slices of bread, then cooking the combo until crispy. Best of all, you don’t need a special appliance or utensil to make these panini meltingly delicioussimply “press” an extra saucepan and a couple of canned goods into service.
